- Do not wash the Aborio rice before cooking.
- The starch released during stirring gives risotto
its creamy texture.
Cook risotto in a heavy-bottomed pot, so it cooks evenly.
It takes about 25-35 minutes to cook.
Cook the aborio rice on medium to low heat.
Barely cover the rice with broth when beginning to cook.
2 Cups of dry aborio rice will serve 4.
Once you start adding the broth, keep the risotto at a low even simmer.
Cook times vary.
- But you will know when it is done when the outside is
tender yet the grains or rice still have
a bit of firmness.
