Risotto

  1. Do not wash the Aborio rice before cooking.

    • The starch released during stirring gives risotto
      its creamy texture.

  2. Cook risotto in a heavy-bottomed pot, so it cooks evenly.
  3. It takes about 25-35 minutes to cook.
  4. Cook the aborio rice on medium to low heat.
  5. Barely cover the rice with broth when beginning to cook.
  6. 2 Cups of dry aborio rice will serve 4.
  7. Once you start adding the broth, keep the risotto at a low even simmer.
  8. Cook times vary.

    • But you will know when it is done when the outside is
      tender yet the grains or rice still have
      a bit of firmness.
