Sesame                             Sunflower and Tofu Stuffed Summer Squash

INGREDIENTS 1 cup Sesame Sunflower Bread
(or use your own favorote bread)
1 medium garlic clove (sliced thin)
1 egg
1/4 pound Tofu (freeze, then thaw and drain)
1 tablespoon fresh dill
1/4 cup brocolli florettes (chopped)
1/4 cup diced tomato (medium dice)
1/8 cup feta cheese (crumbled-check label
for meat products)
a dash o' pepper
1 summer squash



INSTRUCTIONS
Slice garlic.
In food processor puree tofu
add egg and transfer to a bowl.
Add brocolli.
Tear bread into pieces -add to mix
crumble in feta cheese add tomato, dill and season.
Mix well

pre-heat oven to 375 degrees

Cut squash in half (length-wise)
spoon out seeds leaving a channel
fill squash with stuffing

bake for 20-30 minutes or until stuffing has browned
