Gazapacho Pasta Salad

INGREDIENTS
8 ounces Rotini, Twists, or Spirals, uncooked
4 medium ripe tomatoes, peeled, seeded and chopped
1/2 cup sliced green onions (scallions)
1/2 cup peeled, seeded and chopped cucumber
1 clove garlic, minced
2 tablespoons chopped cilantro OR
2 teaspoons dried cilantro
2 tablespoons olive oil
1 tablespoon red wine vinegar OR
1 tablespoon white wine vinegar
1 teaspoon salt
Cayenne pepper, to taste



INSTRUCTIONS
Prepare pasta according to package directions; drain.
Combine pasta with remaining ingredients.
Cover and chill at least 1 hour.

Serves 6-8
