Curried Split                      Pea Soup

INGREDIENTS

16 ounces packaged dried green split peas
rinsed and drained and picked over
1 medium onion, chopped
6 cups boiling water
2 1/2 tablespoons curry powder
6 carrots, peeled and chopped
2 celery ribs, chopped
1/4 teaspoon seasoned salt,or more to taste
1/4 teaspoon freshly ground pepper-
or more to taste
1 cup chopped vegetarian Canadian bacon



INSTRUCTIONS
In a 4- or 5-quart electric slow cooker,
mix together all the ingredients except
1/2 tablespoon of the curry powder.
Cover and cook on the low
heat setting 9 to 10 hours.
Stir in the remaining 1/2 tablespoon curry powder.
Add more seasoned salt and pepper
to taste, if needed.

Serves 6-8
